Chicken & Waffles w/ Country Gravy

Ingredients

Protein
 3-4 Chicken thighs/breasts (boneless & skinless)
 3-4 bacon slices
 1-16oz pork breakfast sausage
For the chicken breading
 Fried Chicken Breading (packet)
 Fresh black pepper
For the gravy
 ½ cup flour
 1 cups buttermilk
For the waffles
 2 ¼ cups waffle batter mix
 1 Tbsp baking powder
 ½ tsp ground cinnamon
 2 cups buttermilk
 ½ cup avocado oil
 2 large eggs 
 1 tsp vanilla extract

Cooking Instructions

Heat waffle grates: Place waffle grates on the Blackstone and coat with nonstick oil spray.  The target
temp for the grates is 375F to achieve crispy outside and fluffy inside.
Heat the oil: Fill a pan with peanut oil about 2” high. Heat until oil reaches 350 F. You want to cook the
chicken around 325F, the temperature will drop when you add the chicken.
Heat the cast iron: Place cast iron pan on the Blackstone. This pan will aid to keep the breakfast gravy
contained on the griddle top.
Make the chicken batter: Pat the chicken dry with a paper towel, then cut into thick strips. Roll each
piece of chicken in the waffle mixture, then in the egg wash, then again in the waffle mixture.
Make the waffle batter:  In a bowl, mix waffle batter, eggs, baking powder, avocado oil, vanilla extract,
buttermilk, and cinnamon together.

Cook the gravy: Place breakfast sausage into cast iron pan and chop. When sausage is approx. 90%
cooked, add 1-2 tbsp flour to absorb grease and mix. When completely absorbed, add buttermilk in
small increments and whisk until desired consistency. Season with black pepper as needed. Remove
from heat to rest and cover to keep warm.
Fry the chicken: When oil is hot, add chicken, depending on the size of your pan, and cook, turning
every few minutes, until all chicken is a golden brown in color and an internal temperature of 160F,
about 3-5 minutes per batch. Transfer chicken to a wire rack to rest.
Fry the bacon: Fry bacon to achieve a crispy finish directly on the griddle top. Remove and chop into
crumbles.
Cook the waffles: Coat waffle grate with nonstick oil spray. Pour waffle batter into each waffle grate and
cook until golden brown in color.
Assembly: Plate the waffle, center chicken over the waffle, coat the chicken with gravy, add bacon
crumbles, and finally drizzle maple syrup. Serve immediately! (As if you could wait any longer…)
